Tomato Eggplant Sauce

Eggplant, or aubergine, is a large, egg-shaped fruit that grows on a plant also called eggplant. The plant originated in northern India and later spread to China, Europe, and South America. Today, it grows in many tropical lands and as far north as New York.

Among the great number of varieties of eggplant, the best known, or at least the most used in cooking, is the long purple aubergine. The purple eggplant has been a popular vegetable since 1860, particularly because it is low in calories.
